1 lb large shrimp, peeled and deveined

1 cup breadcrumbs (preferably seasoned)

1/2 cup grated parmesan cheese

1/2 cup cream cheese, softened

1/4 cup mayonnaise

2 cloves garlic, minced

1/2 cup onion, finely chopped

1/2 cup bell pepper, finely chopped (any color)

1/4 cup fresh parsley, chopped

1 tsp Old Bay Seasoning

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese (for topping)

2 tbsp olive oil

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes, or until softened. Add minced garlic and cook for an additional minute until fragrant. Remove from heat and set aside.

      Prepare the Stuffing Mixture: In a large mixing bowl, combine the sautéed vegetables, breadcrumbs, parmesan cheese, cream cheese, mayonnaise, parsley, Old Bay seasoning, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated. The mixture should be thick but creamy.

        Stuff the Shrimp: Take each shrimp and place about 1-2 tablespoons of the stuffing mixture onto the shrimp, carefully pressing it down to adhere well. Arrange the stuffed shrimp in a greased casserole dish.

          Add Cheese Topping: Once all the shrimp are stuffed and placed in the casserole dish, sprinkle the shredded mozzarella cheese evenly over the top of the stuffed shrimp.
