4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini or ciliegine)

1/4 cup fresh basil leaves, chopped

1/2 cup balsamic vinegar

2 tablespoons honey or maple syrup

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Prepare the Chicken: Season the chicken breasts with salt, pepper, and garlic powder on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

      Make the Balsamic Glaze: In the same skillet, reduce the heat to medium-low and add the balsamic vinegar, honey (or maple syrup), and Italian seasoning. Stir to combine, bringing the mixture to a gentle simmer. Allow it to cook for about 5-7 minutes, or until it thickens slightly.

        Add the Tomatoes and Mozzarella: Once the balsamic glaze has thickened, add the halved cherry tomatoes and mozzarella balls to the skillet. Toss them in the glaze until well coated and cook for an additional 2-3 minutes until the mozzarella starts to soften.

          Combine and Serve: Return the seared chicken breasts to the skillet, spooning the balsamic glaze, tomatoes, and mozzarella over each piece. Cook together for about 2-3 minutes, allowing the chicken to absorb some of the glaze.

            Garnish: Sprinkle the fresh basil on top just before serving, for an aromatic finish.

              Plate and Enjoy: Serve hot, drizzling additional balsamic glaze over the chicken if desired.
