Ingredients

2 ripe bananas, mashed

3 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1/2 cup milk, warmed (110°F)

1/4 cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

1/2 tsp salt

1 tbsp ground cinnamon

1/4 cup brown sugar

1/2 cup chopped walnuts (optional)

Powdered sugar (for drizzle)

Instructions

Prepare the Dough: In a small bowl, combine the warmed milk and active dry yeast. Let sit for about 5 minutes until it becomes frothy. In a large mixing bowl, blend the mashed bananas, melted butter, granulated sugar, egg, vanilla extract, and salt. Add the frothy yeast mixture to the wet ingredients.

Mix the Dry Ingredients: In a separate bowl, whisk together the flour. Gradually add the flour to the wet mixture, stirring until a sticky dough forms.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Make the Filling: In a small bowl, combine the brown sugar, ground cinnamon, and chopped walnuts (if using).

Roll Out the Dough: After the dough has risen, punch it down and roll it out into a large rectangle (about 1/4 inch thick). Spread melted butter over the surface of the dough, then sprinkle the cinnamon sugar mixture evenly across.

Form the Rolls: Starting from one edge, roll the dough tightly into a log. Slice the log into 12 equal pieces and place them in a greased baking dish, cut side up.

Second Rise: Cover the rolls again and let them rise for another 30 minutes. Preheat the oven to 350°F (175°C).

Bake the Rolls: Bake for 20-25 minutes or until the tops are golden brown.

Drizzle with Icing: Allow the rolls to cool slightly before drizzling with powdered sugar mixed with a little milk to create a thick icing.

Serve & Enjoy: Serve the warm banana cinnamon rolls fresh from the oven and enjoy a delightful twist on a classic treat!
