1 cup rolled oats

1/2 cup all-purpose flour or whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup blueberries or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or grease it lightly.

    Combine the Wet Ingredients: In a large bowl, mix together the mashed bananas, brown sugar, honey (or maple syrup), applesauce, eggs, and vanilla extract until well blended.

      Mix the Dry Ingredients: In a separate bowl, combine the rolled oats, flour, baking soda, baking powder, cinnamon, and salt. Stir until evenly distributed.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until just combined; do not overmix. If using, fold in the chopped nuts and blueberries or chocolate chips.

          Fill the Muffin Cups: Scoop the batter into the prepared muffin pan, filling each cup about 2/3 full to allow for rising.
