2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

1/3 cup pine nuts (or walnuts for a twist)

2 cloves garlic, minced

Salt and pepper to taste

12 ounces spaghetti or your choice of pasta

Optional: Cherry tomatoes and spinach for garnish

Prepare the Pesto: In a food processor, combine the basil leaves, grated Parmesan, pine nuts, and minced garlic. Pulse until the mixture is finely chopped.

    Emulsify: With the machine running, slowly pour in the olive oil until the pesto reaches your desired consistency (smooth or slightly chunky). Season with salt and pepper to taste. Set aside.

      Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the spaghetti.

        Combine: In a large mixing bowl, toss the hot drained pasta with the basil pesto. If the mixture is too thick, add a splash of the reserved pasta water until you reach the desired creaminess.

          Serve: Plate the pasta and garnish with cherry tomatoes and fresh spinach if desired. Sprinkle with extra Parmesan for added flavor.
