BBQ Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup barbecue sauce (your favorite brand or homemade)

1 cup corn kernels (frozen or fresh)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup green onions, chopped

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper, to taste

Olive oil, for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Pierce each potato several times with a fork and place them on a baking sheet lined with foil. Drizzle lightly with olive oil and sprinkle with salt.

      Bake the Sweet Potatoes: Bake the sweet potatoes in the preheated oven for about 45-60 minutes, or until they are tender and easily pierced with a fork.

        Prepare the BBQ Chicken Filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, corn kernels, black beans, and half of the green onions. Mix until well combined. Add salt and pepper to taste.

          Assemble the Stuffed Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Carefully slice each potato down the middle, creating a pocket for the filling. Fluff the inside of each potato with a fork.
