BBQ Chicken Zucchini Boats

4 medium-sized zucchinis

2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheese (cheddar or a blend)

1/2 cup red onion, finely chopped

1/4 cup corn (frozen or canned, drained)

1/4 cup chopped fresh cilantro (optional)

Salt and pepper to taste

Olive oil (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the seeds and some of the flesh to create spaces for the filling. Leave about a 1/4-inch thick shell.

      Mix the Filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, chopped red onion, corn, and half of the cheese. Season with salt and pepper to taste, mixing until well combined.

        Fill the Zucchini Boats: Place the hollowed zucchini halves in a baking dish. Drizzle with a little olive oil to prevent sticking. Spoon the BBQ chicken mixture evenly into each zucchini boat.

          Top with Cheese: Sprinkle the remaining cheese on top of the filled zucchini boats for a delicious cheesy crust.

            Bake: Cover the baking dish with foil, and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes. Sprinkle with fresh cilantro if desired, then serve warm.
