Beef Lombardi Casserole

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced

1 can (15 oz) diced tomatoes, drained

2 cups cooked elbow macaroni

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups beef broth

2 teaspoons Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.

      Sauté Vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the skillet with the beef. Sauté until the vegetables are tender, about 5-7 minutes.

        Mix Ingredients: Stir in the drained diced tomatoes, cooked macaroni, frozen mixed vegetables, beef broth, Italian seasoning, salt, and pepper. Mix well and let simmer for about 10 minutes, allowing the flavors to meld.

          Prepare Cheese Mixture: In a separate bowl, combine the ricotta cheese and half of the shredded mozzarella cheese. Mix until well blended.

            Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the beef mixture in an even layer. Next, dollop spoonfuls of the ricotta mixture over the beef. Follow with the remaining beef mixture, finishing off with the rest of the mozzarella cheese and the grated Parmesan cheese on top.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired before serving.
