Beef Skewers with Peach Salsa

For the Beef Skewers:

1 ½ pounds beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon minced garlic

1 tablespoon fresh ginger, grated

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon cumin

Salt to taste

8 wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, finely chopped (seeds removed for less heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Beef: In a large bowl, whisk together olive oil, soy sauce, Worcestershire sauce, minced garlic, grated ginger, black pepper, smoked paprika, cumin, and salt. Add beef cubes to the mixture, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (up to overnight) to let the flavors meld.

    Prepare the Skewers: Once marinated, preheat your grill to medium-high heat. Thread the marinated beef cubes onto the skewers, leaving a small space between each piece for even cooking.

      Make the Peach Salsa: In a separate bowl, combine the diced peaches, red onion, jalapeño, and cilantro. Squeeze fresh lime juice over the mixture and season with salt and pepper. Toss gently to combine and set aside.

        Grill the Skewers: Place the beef skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally for even cooking, until the beef is medium-rare to medium, achieving an internal temperature of about 135°F (57°C) to 145°F (63°C).

          Serve: Remove the skewers from the grill and let them rest for 5 minutes. Serve hot, topped with a generous spoonful of peach salsa on the side, or garnish the skewers with the salsa for a vibrant presentation.
