Ingredients
  

1 pound ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

4 large flour tortillas

1/4 cup fresh cilantro, chopped (optional)

Sour cream and salsa for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until soft, about 3-5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Increase the heat to medium-high and add the ground beef. Cook until browned and thoroughly cooked, breaking it apart with a spatula as it cooks. Drain excess fat.

        Stir in the cumin, chili powder, smoked paprika, salt, and pepper, mixing well.

          Add the cooked rice, black beans, and corn to the beef mixture. Stir to combine and heat through, about 3-4 minutes.

            Remove the skillet from heat and mix in half of the shredded cheese until well incorporated.

              Place a large tortilla on a clean surface. Spoon about 1 cup of the beef mixture onto the center of the tortilla. Sprinkle with additional cheese and cilantro, if using.

                Fold in the sides of the tortilla, then roll it from the bottom to the top, enclosing the filling.

                  Repeat with the remaining tortillas and filling.

                    In the same skillet, place the burritos seam side down and cook over medium heat for 2-3 minutes on each side until golden and crispy. This will help to melt the cheese inside.

                      Serve hot, with sour cream and salsa on the side. Enjoy!
