1 medium green cabbage, chopped

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, chopped

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, with juices

6 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

1 tablespoon lemon juice (optional)

Fresh parsley for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic; sauté until translucent and fragrant, about 3–4 minutes.

    Add Carrots and Celery: Stir in the sliced carrots and chopped celery. Cook for an additional 5 minutes until they start to soften.

      Incorporate Cabbage and Peppers: Add the chopped cabbage and diced red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally until the cabbage begins to wilt.

        Add Tomatoes and Broth: Pour in the diced tomatoes and their juices, followed by the broth. Stir to combine.

          Season the Soup: Add the dried thyme, oregano, bay leaf, salt, and pepper. Bring the mixture to a boil.

            Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes, or until all the vegetables are tender.

              Final Touches: Remove the bay leaf. Taste the soup; adjust seasoning with salt, pepper, and lemon juice if desired for a bit of brightness.
