Ingredients
  

1 lb large shrimp, peeled and deveined

1 cup stone-ground grits

4 cups water (for grits) + additional for cooking shrimp

1 cup sharp cheddar cheese, grated

1/2 cup heavy cream

1/2 cup andouille sausage, sliced

1 small onion, diced

2 cloves garlic, minced

2 tbsp Cajun seasoning

2 tbsp butter

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

Prepare the Grits: In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the stone-ground grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally until thickened. Add in the heavy cream and grated cheddar cheese, stirring until melted and creamy. Season with salt and pepper to taste. Set aside.

    Cook the Sausage: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced andouille sausage and cook until browned, about 4-5 minutes. Remove sausage and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of butter. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season with Cajun seasoning, salt, and pepper. Cook, stirring occasionally, for about 3-5 minutes or until the shrimp turn pink and opaque. Return the sausage to the skillet, and stir to combine.

          Serve: Place a generous spoonful of cheesy grits on a plate or in a bowl. Top with the Cajun shrimp and sausage mixture. Garnish with sliced green onions for a fresh touch.
