12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove and set aside.

      Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes. Stir in the spinach and cook until wilted.

        Combine Ingredients: Lower the heat and pour in the heavy cream. Add the Parmesan cheese and Italian seasoning, stirring until combined. Incorporate the cooked fettuccine and reserved pasta water a little at a time until the sauce reaches your desired creaminess.
