Ingredients

2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko preferred for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray or olive oil for baking

Instructions

Prepare the Zucchinis: Start by preheating your oven to 425°F (220°C). Wash the zucchinis and cut off the ends. Slice each zucchini into fry-like sticks, approximately 1/2 inch thick.

Set Up Breading Station: In a shallow bowl, place the all-purpose flour. In a second bowl, whisk the eggs until well combined. In a third bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

Coat the Zucchini: Dip each zucchini stick first into the flour, ensuring it's fully coated. Shake off any excess flour, then dip it into the egg mixture. Finally, roll it in the breadcrumb mixture, pressing lightly to ensure it adheres well. Repeat this process for all zucchini sticks.

Arrange on Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray. Arrange the coated zucchini fries in a single layer, making sure they aren’t touching to allow for even crisping.

Bake Until Crispy: Spray the tops of the zucchini fries with a little cooking spray or drizzle with olive oil. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

Serve & Enjoy: Remove from the oven and let cool for a few minutes. Serve your crispy zucchini fries warm with your favorite dipping sauce, such as marinara or ranch.
