1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade blend: cumin, chili powder, paprika, oregano, salt)

1 cup beef broth (or water)

Salt and pepper to taste

2 cups cooked rice (white or brown)

1 can black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

For the Guacamole:

2 ripe avocados

1 lime, juiced

1 small tomato, diced

1/4 cup red onion, finely chopped

Salt to taste

Fresh cilantro (optional)

For the Pico de Gallo:

2 ripe tomatoes, diced

1/2 small red onion, diced

1 jalapeño, seeds removed and finely chopped

1 lime, juiced

Salt to taste

Fresh cilantro, chopped

For Toppings:

1 cup shredded cheese (cheddar or Mexican blend)

1 cup sour cream

Fresh cilantro, for garnish

Instructions
 

Prepare the Taco Meat:

    - In a large skillet, heat the olive oil over medium heat.

              Make the Guacamole:

                    Prepare the Pico de Gallo:

                      - In a separate bowl, combine diced tomatoes, red onion, jalapeño, lime juice, and salt. Mix well and let it sit for flavors to meld.
