Ingredients
  

2 cups cooked pasta (penne or fusilli works great)

1 lb boneless, skinless chicken breasts

1/4 cup honey

1 tablespoon black pepper (freshly cracked)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1 bell pepper (any color), sliced thinly

1 small red onion, thinly sliced

1/2 cup shredded mozzarella cheese

1/4 cup fresh basil, chopped

4 slices of ciabatta or panini bread

Optional: Red pepper flakes for additional heat

Marinate the Chicken: In a bowl, mix honey, black pepper, olive oil, garlic powder, paprika, and salt. Add the chicken breasts, ensuring they are well-coated. Cover and marinate in the fridge for at least 30 minutes.

    Cook the Chicken: Preheat a skillet or grill over medium-high heat. Remove chicken from marinade and cook for about 6-7 minutes on each side until cooked through and juices run clear. Let it rest for 5 minutes, then slice into thin strips.

      Sauté the Veggies: In the same skillet, add a little olive oil and sauté the sliced bell pepper and onion until they’re tender and slightly caramelized, about 4-5 minutes.

        Mix Pasta: In a large bowl, combine the cooked pasta, sautéed peppers and onions, sliced chicken, and fresh basil. Toss until well mixed. If desired, sprinkle with red pepper flakes for an extra kick.

          Assemble the Panini: Take two slices of ciabatta or panini bread and layer with the pasta mixture. Top with shredded mozzarella cheese, and close with another slice of bread.
