Ingredients

4 large russet potatoes

1 lb sirloin steak, diced into small cubes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup cream cheese, softened

½ cup sour cream

¼ cup milk (or more for desired creaminess)

¼ cup green onions, chopped

½ cup cooked bacon, crumbled

Optional: hot sauce for serving

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C).

Bake the potatoes: Prick the russet potatoes several times with a fork and rub with a little olive oil. Sprinkle with salt, then place directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

Cook the steak: While the potatoes are baking, heat the olive oil in a skillet over medium-high heat. Add the diced sirloin steak, and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes until the steak is browned and cooked to your desired level. Remove from heat and set aside.

Prepare the cheese sauce: In a mixing bowl, combine the cream cheese, sour cream, milk, and half of the shredded cheddar cheese. Mix until creamy and smooth, adjusting the milk for your desired consistency.

Assemble the potatoes: Once the potatoes are done, remove them from the oven and let cool slightly. Carefully slice each potato down the center, pushing the ends slightly to fluff up the insides.

Add the filling: Spoon the creamy cheese mixture into the center of each baked potato, followed by the cooked steak, crumbled bacon, and the remaining cheddar cheese.

Melt and broil: Return the loaded potatoes to the oven on a baking sheet. Broil on high for about 3-5 minutes, or until the cheese is melted and bubbly. Keep a close watch to prevent burning.

Garnish and serve: Remove from the oven and sprinkle with chopped green onions and optional hot sauce if desired. Serve hot and enjoy your deliciously loaded steak and cheese baked potatoes!
