Ingredients

1 pound large shrimp, peeled and deveined

1/4 cup olive oil

2 tablespoons fresh lemon juice

2 tablespoons fresh lime juice

1 tablespoon honey

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for spice)

2 tablespoons fresh parsley or cilantro, chopped (for garnish)

Instructions

Make the Marinade: In a medium mixing bowl, whisk together the olive oil, lemon juice, lime juice, honey, minced garlic, smoked paprika, ground cumin, sea salt, black pepper, and red pepper flakes (if using).

Marinate the Shrimp: Add the peeled and deveined shrimp to the bowl, ensuring they are well-coated with the marinade. Cover the bowl with plastic wrap or transfer the shrimp and marinade to a resealable plastic bag. Refrigerate for at least 30 minutes, but no more than 2 hours for best flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

Skewer the Shrimp: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, about 5-6 shrimp per skewer.

Grill the Shrimp: Lightly oil the grill grates or brush the skewers with olive oil to prevent sticking. Grill the shrimp for about 2-3 minutes per side, or until they turn pink and opaque. Be careful not to overcook them as they can become rubbery.

Serve: Remove the shrimp from the grill and let them rest for a moment. Garnish with freshly chopped parsley or cilantro before serving. Enjoy with lemon wedges on the side!
