Ingredients

1 lb ground beef (or turkey for a lighter option)

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 cup corn kernels (frozen or canned)

1 bag (10 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1 cup sliced black olives

1 jalapeño, sliced (optional, for extra heat)

Green onions, chopped (for garnish)

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for serving)

Lime wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Meat: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.

Add Taco Seasoning: Stir in the taco seasoning according to package instructions, adding a little water if needed to help distribute the spices evenly. Cook for an additional 5 minutes.

Combine Ingredients: In a large mixing bowl, combine the cooked ground beef, black beans, diced tomatoes, corn, and half of the cheddar and Monterey Jack cheeses. Stir well to combine.

          Layer the Casserole:

            - In a greased 9x13 inch baking dish, spread half of the tortilla chips evenly across the bottom.

              - Spoon half of the beef and cheese mixture over the chips.

                - Dollop half of the sour cream over the mixture.

                  - Repeat the layering process: another layer of chips, the remaining beef mixture, and then the remaining chips.

Top with Cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses over the top.

Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and let it sit for a few minutes. Before serving, sprinkle with black olives, sliced jalapeños, chopped green onions, and fresh cilantro.

Serve: Serve warm with diced avocado and lime wedges on the side for squeezing over the casserole.
