Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Pinch of salt

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

2 tbsp all-purpose flour

For the Strawberry Topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

1 tbsp water

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined.

        - Press the mixture firmly into the bottom of a greased 9x13-inch baking pan to form an even layer.

          - Bake for 8 to 10 minutes or until lightly golden. Remove from the oven and let cool.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.

                - Add the vanilla extract and mix well.

                  - Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

                    - Gently mix in the sour cream and flour until everything is well combined.

                      - Pour the cheesecake mixture over the cooled crust and smooth the top.

                        Bake the Cheesecake:

                          - Bake in the preheated oven for 30 to 35 minutes or until the cheesecake is set but still slightly jiggly in the center.

                            - Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. This helps prevent cracks.

                              Prepare the Strawberry Topping:

                                - In a saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook for about 5 minutes until the strawberries start to release their juices.

                                  - In a small bowl, mix the cornstarch and water to create a slurry. Add this to the strawberry mixture and cook for an additional 2 minutes until the sauce thickens. Remove from heat and let cool.

                                    Assemble the Bars:

                                      - Once the cheesecake has cooled to room temperature, spread the strawberry topping evenly over the cheesecake layer.

                                        - Refrigerate the bars for at least 4 hours or overnight for the best flavor and texture.

                                          Serve:

                                            - Cut into squares and serve chilled. Enjoy your delicious strawberry cheesecake bars!
