For the Cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup buttermilk

1 ½ cups fresh strawberries, pureed

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tbsp vanilla extract

2-3 tbsp heavy cream (optional, for consistency)

For Decoration:

Fresh strawberries, halved

Mint leaves (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Prepare the Cake Batter: In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt. In a separate bowl, beat the softened butter and sugar together until light and fluffy, about 3-5 minutes. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      Combine Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined. Gently fold in the pureed strawberries.

        Bake the Cakes: Divide the batter evenly among the three prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

          Make the Cream Cheese Frosting: In a large bowl, beat the cream cheese and softened butter together until smooth. Gradually add in the powdered sugar and vanilla extract. Mix until creamy and spreadable. If the frosting is too thick, add heavy cream a tablespoon at a time until desired consistency is reached.

            Layer the Cake: Once the cakes are completely cooled, place one layer on a cake stand or plate. Spread a layer of cream cheese frosting on top, then add the second cake layer. Repeat the process, adding more frosting on top of the second layer and then placing the last cake layer on top.

              Frost the Outside: Use the remaining cream cheese frosting to cover the top and sides of the entire cake. Smooth it out as desired.

                Decorate: Top with halved fresh strawberries and mint leaves for a beautiful presentation.
