Ingredients

6 large eggs

1/2 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup fresh spinach, chopped

1/2 cup cooked bacon, crumbled (about 4 strips)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Cooking spray or olive oil (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing each cup with cooking spray or a light drizzle of olive oil.

Whisk the Eggs: In a medium-sized mixing bowl, crack the eggs and add the heavy cream. Whisk vigorously until the mixture is smooth and slightly frothy.

Mix in the Ingredients: Stir in the shredded cheddar cheese, chopped spinach, crumbled bacon, salt, pepper, and garlic powder until everything is well combined.

Fill the Muffin Tin: Carefully pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for the egg bites to rise as they bake.

Bake in the Oven: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and a toothpick comes out clean when inserted into the center.

Cool and Release: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Gently run a knife around the edges of each egg bite to help release them from the pan.

Serve or Store: Carefully remove the egg bites from the muffin tin. Serve warm, or allow them to cool completely before storing in an airtight container in the refrigerator for up to 5 days. They can also be frozen for longer storage.
