Black-Bean Sweet Potato Stew

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 can (14 oz) diced tomatoes with green chilies

1 cup vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Heat the Olive Oil: In a large pot or Dutch oven over medium heat, add the olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes until softened.

    Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, and cayenne pepper. Cook for another 1-2 minutes, until the garlic is fragrant.
