1 lb (450g) sirloin steak, cut into bite-sized cubes

4 cloves black garlic, minced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 tablespoon Worcestershire sauce

Fresh parsley, chopped for garnish

Prep the Steak: Pat the sirloin cubes dry with paper towels. Season generously with salt, pepper, and smoked paprika. This helps to develop a rich crust when searing.

    Make the Black Garlic Butter: In a small bowl, mix together the minced black garlic, softened butter, and thyme. Once well combined, refrigerate until ready to use, allowing the flavors to meld.

      Sear the Steak Bites: In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the steak cubes in a single layer (you may need to do this in batches) and sear for about 2-3 minutes without moving them to achieve a nice crust.
