The technique of blackening is a cooking method that originated in the southern United States, particularly in Louisiana, where it became popularized by renowned chef Paul Prudhomme in the 1980s. Blackening emphasizes intense flavors and a striking appearance, achieved by cooking fish or meat in a cast-iron skillet over high heat, often accompanied by a robust blend of spices.

Ingredients

For the Blackened Tilapia:

4 tilapia fillets (about 6 oz each)

2 tablespoons paprika

1 teaspoon cayenne pepper

1 teaspoon dried thyme

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

3 tablespoons olive oil (for cooking)

For the Mango Salsa:

1 ripe mango, finely diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, deseeded and minced (adjust for heat)

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, chopped (optional)

Instructions

Make the Mango Salsa: In a mixing bowl, combine the diced mango, red bell pepper, red onion, jalapeño, and lime juice. Season with salt and pepper to taste. Add chopped cilantro if desired. Mix well and set aside to allow flavors to meld.

Prepare the Blackening Spice: In a small bowl, mix together the paprika, cayenne pepper, dried thyme, garlic powder, onion powder, black pepper, and salt until well combined. This will be your blackening spice mix.

Season the Tilapia: Pat the tilapia fillets dry with paper towels. Coat both sides of each fillet generously with the blackening spice mix, pressing it onto the fish to ensure it adheres well.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering. Make sure the oil is hot enough for a good sear.

Cook the Tilapia: Add the seasoned tilapia fillets to the skillet in a single layer. Cook for 3-4 minutes on each side until the fish is cooked through and has a nice blackened crust. (Cooking time may vary based on thickness of fillets; adjust as needed.)

Serve: Plate the blackened tilapia and spoon the mango salsa generously over the top. Serve immediately with your choice of sides, such as rice or a fresh salad.
