Blueberry Breakfast Quesadilla

4 large flour tortillas

1 cup fresh blueberries (or frozen, thawed)

1 cup cream cheese, softened

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 cup shredded mozzarella or goat cheese (optional)

2 tablespoons butter (for frying)

Powdered sugar (for serving, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Filling: In a medium bowl, mix the softened cream cheese, honey (or maple syrup), vanilla extract, and cinnamon until smooth and well combined. Gently fold in the fresh blueberries, being careful not to squish them too much.

    Assemble the Quesadilla: Lay out two tortillas. Spread half of the cream cheese filling evenly over each tortilla, leaving about a half-inch border around the edges. If using, sprinkle the shredded mozzarella or goat cheese over the filling.

      Top with Tortillas: Place the remaining two tortillas on top of the filled tortillas, pressing down gently to seal.

        Cook the Quesadillas: In a large skillet, melt 1 tablespoon of butter over medium heat. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip and add the remaining butter, then cook the other side for another 3-4 minutes until golden and crispy.

          Slice and Serve: Remove the quesadilla from the skillet and let it sit for a minute before slicing it into wedges. Repeat the cooking process with the second quesadilla. Optionally, sprinkle with powdered sugar and garnish with fresh mint leaves before serving.
