Ingredients

For the Blueberry Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

4 large eggs

1 tablespoon vanilla extract

1 cup buttermilk

2 cups fresh blueberries (or frozen, if needed)

For the Lemon Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

½ teaspoon vanilla extract

A pinch of salt

Instructions

Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream the Butter and Sugars: In a large mixing bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 4-5 minutes.

Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined.

Combine Wet and Dry Ingredients: Gradually alternate adding the flour mixture and buttermilk into the butter mixture, starting and ending with the flour mixture. Mix until just combined; do not overmix.

Fold in Blueberries: Gently fold in the blueberries with a spatula, taking care not to break them.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Make the Lemon Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, lemon juice, lemon zest, vanilla extract, and salt. Beat until fluffy and well combined.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top. Frost the top and sides of the entire cake with the remaining lemon cream cheese frosting.

Decorate and Serve: Optionally, garnish the top with extra blueberries, lemon zest, or edible flowers for a beautiful presentation. Slice and enjoy your delightful Blueberry Bliss Cake!
