Ingredients

2 cups fresh blueberries, rinsed and drained

1 medium red onion, finely chopped

1 jalapeño pepper, seeds removed and finely diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 tablespoon honey (or agave syrup for a vegan option)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 avocado, diced (optional for creaminess)

Instructions

In a medium-sized bowl, combine the fresh blueberries, chopped red onion, diced jalapeño, and cilantro.

In a small bowl, whisk together the lime juice, honey, salt, and black pepper until well combined.

Pour the lime mixture over the blueberry mixture and gently toss to combine, ensuring that the blueberries do not get mushy.

If desired, gently fold in the diced avocado for an extra creamy texture.

Cover the salsa with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serve chilled with tortilla chips, grilled chicken, or as a vibrant topping for tacos.
