400g spaghetti

250g ground beef

250g ground pork

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, finely chopped

1 celery stalk, finely chopped

400g canned diced tomatoes

2 tablespoons tomato paste

150ml red wine (optional)

1 teaspoon dried oregano

1 teaspoon dried basil

1 bay leaf

Salt and pepper to taste

4 tablespoons olive oil

Fresh basil leaves (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened.

      Add Ground Meat: Increase the heat to medium-high. Add the ground beef and pork to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

        Flavor Base: Stir in the minced garlic, cooking for an additional minute until fragrant. Season with salt, pepper, oregano, and basil.

          Incorporate Tomatoes and Wine: Pour in the canned diced tomatoes and tomato paste. If using, add the red wine for added depth. Stir well to combine.

            Simmer: Add the bay leaf and reduce heat to low. Allow the sauce to simmer for at least 30 minutes (up to 1 hour for maximum flavor), stirring occasionally. If the sauce becomes too thick, add a little reserved pasta water until the desired consistency is reached.

              Combine: Once the sauce is ready, toss it with the cooked spaghetti in the skillet. Mix until the pasta is well coated.

                Serve: Divide the Spaghetti Bolognese among plates. Garnish with fresh basil leaves and generous shavings of Parmesan cheese.
