Ingredients

1 lb baby carrots, peeled and trimmed

4 tbsp unsalted butter

3 tbsp honey

1 tsp sea salt

1/2 tsp freshly ground black pepper

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

Zest of 1 lemon

Optional: chopped fresh parsley for garnish

Instructions

Boil the Carrots: In a large pot, bring salted water to a boil. Add the baby carrots and cook for about 5-7 minutes, until they are just tender but still have a slight crunch. Drain and set aside.

Brown the Butter: In a large skillet, melt the butter over medium heat. Continue cooking for 4-5 minutes, swirling the pan occasionally until the butter turns a deep golden brown and develops a nutty aroma. Be careful not to let it burn.

Add Honey and Carrots: Once the butter is browned, reduce the heat to low. Add the honey, sea salt, black pepper, and fresh thyme to the skillet. Stir to combine. Then, add the drained carrots and toss in the glaze thoroughly, ensuring they are evenly coated.

Glaze the Carrots: Cook for an additional 5-7 minutes, stirring occasionally, until the carrots are well glazed and heated through. They should absorb the sweet and nutty flavors of the glaze.

Finish and Serve: Remove the skillet from heat. Stir in the lemon zest for a fresh accent. If desired, garnish with chopped parsley before serving.

Enjoy your dish! Serve warm as a delightful side dish for any meal.
