1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup unsweetened almond milk (or regular milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup hot sauce (like Frank's RedHot)

2 tablespoons melted vegan butter (or regular butter)

Fresh celery sticks, for serving

Ranch or blue cheese dressing, for serving

Instructions
 

Preheat Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    Prepare the Batter: In a large mixing bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower florets.

      Coat Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off, then place them onto the prepared baking sheet in a single layer.

        Bake First Time: Bake the coated cauliflower in the preheated oven for about 20 minutes, or until they begin to turn golden and crispy.

          Prepare Buffalo Sauce: While the cauliflower is baking, mix the hot sauce and melted vegan butter in a bowl until well combined.

            Coat with Buffalo Sauce: After 20 minutes, remove the cauliflower from the oven. Drizzle or toss the baked bites in the buffalo sauce mixture until they are well-coated.
