Buffalo Chicken Alfredo Zoodle Nests

Ingredients
  

2 medium zucchinis (for zoodles)

1 pound cooked chicken, shredded (preferably rotisserie or grilled)

1 cup buffalo sauce (adjust based on spice preference)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup shredded mozzarella cheese (for topping)

Fresh chives or parsley, for garnish

Instructions
 

Prepare the Zoodles: Rinse the zucchinis under cool water and slice off the ends. Using a spiralizer, creates zoodles. If you don’t have a spiralizer, you can use a julienne peeler or box grater to create long strands. Place zoodles in a colander and sprinkle with salt to help remove excess moisture. Let them sit for about 15-20 minutes.

    Cook the Chicken: In a medium bowl, mix the shredded chicken with buffalo sauce until evenly coated. Adjust the amount of sauce based on your heat preference.

      Make the Alfredo Sauce: In a saucepan over medium heat, add olive oil and sauté the minced garlic until fragrant, about 30 seconds. Pour in the heavy cream, stir continuously, and allow it to simmer for a minute. Gradually whisk in the Parmesan cheese until melted and creamy. Add the Italian seasoning, salt, and pepper, then remove it from heat.

        Prepare the Nests: Preheat your oven to 375°F (190°C). After the zoodles have sat, pat them dry with a paper towel to remove excess moisture. In a large bowl, combine the zoodles and half of the Alfredo sauce, tossing until the zoodles are fully coated.

          Form the Nests: On a parchment-lined baking sheet, take a handful of the zoodle mixture and form it into a nest shape, creating a small well in the center. Repeat this process with the remaining zoodles.

            Add Chicken & Cheese: Fill each zoodle nest with the buffalo chicken mixture, then top with the remaining Alfredo sauce and sprinkle shredded mozzarella cheese over each nest.

              Bake the Nests: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the cheese is bubbling and golden.

                Garnish and Serve: Once done, remove the nests from the oven and let them cool for a few minutes. Garnish with chopped chives or parsley before serving. Enjoy your Buffalo Chicken Alfredo Zoodle Nests!
