2 slices of thick-cut sourdough bread

1 cup shredded rotisserie chicken

¼ cup buffalo sauce (adjust for heat preference)

1 cup shredded sharp cheddar cheese

½ cup crumbled blue cheese (optional)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon chopped fresh chives (for garnish)

Optional: Sliced pickles or jalapeños for extra crunch

Instructions
 

Prepare the Chicken Mixture: In a medium bowl, combine the shredded rotisserie chicken with buffalo sauce, ensuring the chicken is well coated. For additional flavor, stir in garlic powder and onion powder.

    Assemble the Grilled Cheese: Lay out the two slices of sourdough bread. On one slice, sprinkle a layer of sharp cheddar cheese, followed by a generous portion of the buffalo chicken mixture. If you're using blue cheese, crumble it over the chicken, then top with another layer of cheddar cheese. Place the second slice of sourdough on top.

      Butter and Heat the Skillet: Spread 1 tablespoon of butter on the outside of the top slice of bread. Heat olive oil in a skillet over medium heat.

        Grill the Sandwich: Once the oil is hot, place the sandwich in the skillet, buttered side down. Cook for 3-4 minutes until the bottom is golden brown and crispy. Using a spatula, carefully flip the sandwich over, adding the remaining tablespoon of butter to the pan if necessary.
