1 lb ground beef (80/20 blend for juiciness)

1/2 cup breadcrumbs (preferably panko for a crispy texture)

1/4 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

1 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

For the Maple Dijon Glaze:

1/4 cup real maple syrup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon soy sauce (optional, for umami depth)

For Basting:

4 tablespoons unsalted butter, melted

Fresh thyme or rosemary for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it lightly or lining it with mini muffin paper liners.

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, parsley, Worcestershire sauce, salt, pepper, and smoked paprika. Mix well until just combined, being careful not to overmix.

      Shape the Mini Meatloaves: Using your hands, divide the meat mixture into 10-12 equal portions and shape each into a small loaf or oval, then place them in the prepared muffin tin.
