Ingredients

4 salmon fillets (6 ounces each)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 small zucchini, thinly sliced

4 lemon slices

Aluminum foil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Foil: Cut four sheets of aluminum foil, each about 12x12 inches. This will serve as your packets for the salmon.

Mix the Butter Sauce: In a small bowl, combine the melted butter with minced garlic, chopped parsley, chopped dill, lemon juice, lemon zest, salt, and pepper. Stir until well mixed.

Assemble the Packets: Place one salmon fillet in the center of each foil sheet. Drizzle a quarter of the garlic herb butter mixture over each fillet.

Add Vegetables: Surround each salmon fillet with an equal portion of the halved cherry tomatoes and zucchini slices. Top each fillet with a lemon slice.

Seal the Packets: Carefully fold the sides of the foil up and over the salmon and vegetables, creating a sealed packet. Ensure that no steam can escape while baking, but don’t make them too tight; leave a little room for steam to circulate.

Bake: Place the foil packets directly on a baking sheet and bake in the preheated oven for about 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully open each packet (watch out for hot steam!) and serve the salmon along with the veggies and the rich buttery broth. Enjoy it over a bed of rice or quinoa for a complete meal.
