Ingredients

1 lb elbow macaroni

2 cups lobster meat, cooked and chopped

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

3 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup breadcrumbs (panko preferred)

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2-3 minutes until it turns a light golden color, stirring constantly.

Add Milk: Gradually whisk in the milk, ensuring no lumps form. Continue to cook the mixture, stirring frequently, until it thickens (about 5-7 minutes).

Incorporate Cheese: Once thickened, remove the saucepan from heat and stir in the sharp cheddar and Gruyère cheeses until they melt and the sauce is smooth. Add the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

Combine Pasta and Lobster: In a large mixing bowl, combine the cooked macaroni, cheese sauce, and chopped lobster meat. Stir until everything is evenly coated.

Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish. Sprinkle the breadcrumbs evenly over the top for a crunchy finish.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven, let it sit for a few minutes, then sprinkle with fresh parsley before serving.
