Ingredients

8 oz fettuccine pasta

2 large boneless, skinless chicken breasts

2 tbsp Cajun seasoning

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup chicken broth

1/4 tsp black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Season the Chicken: Rub the Cajun seasoning evenly over the chicken breasts, ensuring they are well coated.

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and allow to rest before slicing.

Make the Alfredo Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring well to combine. Let it simmer for 2-3 minutes.

Add Cheese: Gradually whisk in the Parmesan cheese until melted and creamy. If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency. Season with black pepper and salt to taste.

Combine: Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. Slice the cooked chicken and place it on top of the pasta.

Serve: Garnish with freshly chopped parsley before serving, and enjoy your Cajun Chicken Alfredo Delight!
