2 stalks celery, diced

4 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

3-4 green onions, chopped (for garnish)

1/2 cup cooked and crumbled bacon (optional, for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes, until the veggies are soft and the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.

      Blend the Soup (Optional): For a creamy texture, you can use an immersion blender to partially blend the soup, leaving some potato chunks for texture. If you prefer a chunkier style, skip this step.

        Season the Soup: Stir in the heavy cream, Cajun seasoning, smoked paprika, black pepper, and salt. Adjust the seasoning to your liking. Allow the soup to simmer on low heat for an additional 5 minutes, letting the flavors meld together.
