For the Cake Batter:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup milk

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted (for dipping)

For Optional Dipping Sauce:

1/2 cup chocolate chips

1/4 cup heavy cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a mini muffin tin by greasing it with non-stick spray or lining it with mini cupcake liners.

    Make the Cake Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. In another bowl, mix together the milk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined (do not over-mix).

      Fill the Muffin Tin: Using a small cookie scoop or spoon, fill each muffin cup about 2/3 full with the cake batter.

        Bake the Bites: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

          Prepare the Cinnamon Sugar Coating: In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.

            Coat the Bites: Once the cake bites are cool, dip each one in the melted butter, allowing the excess to drip off, then roll them in the cinnamon sugar mixture until fully coated.

              Optional Dipping Sauce: For a delicious dipping sauce, heat the heavy cream in a small saucepan over low heat. Once warm, add the chocolate chips and stir until melted and smooth. Remove from heat and set aside.
