4 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

2 tablespoons olive oil

Lemon slices, for garnish

Fresh thyme sprigs, for garnish

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together honey, fresh lemon juice, lemon zest, minced garlic, soy sauce, Dijon mustard, thyme, salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and place the thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken thighs over and sear for an additional 3 minutes.

          Add the Marinade: Pour the reserved marinade over the chicken thighs in the skillet. Bring to a simmer, and then transfer the skillet to the preheated oven.
