Caramelized Onion & Feta Stuffed Flatbreads

Ingredients
  

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon sugar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

1 cup crumbled feta cheese

1/2 cup fresh spinach, roughly chopped

1 package of pre-made flatbread (or 4 homemade flatbreads)

Optional: 1 egg (for egg wash)

Optional: sesame seeds or poppy seeds for topping

Instructions
 

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 10 minutes, stirring occasionally, until they begin to soften. Sprinkle in the sugar, balsamic vinegar, salt, and pepper. Continue to cook for another 15-20 minutes, stirring frequently, until the onions are deeply caramelized and brown. Add the fresh thyme and mix well. Remove from heat and allow to cool slightly.

    Prepare the Filling: In a bowl, combine the caramelized onions, crumbled feta cheese, and chopped spinach. Mix gently to combine. Taste and adjust seasoning with salt and pepper as needed.

      Prepare the Flatbread: If using pre-made flatbread, lay them out flat. If using homemade, roll out dough into desired thickness. Preheat your oven to 400°F (200°C).

        Stuff the Flatbreads: Take one flatbread at a time and place a generous amount of the filling mixture in the center, making sure to leave about an inch of space around the edges. Fold the flatbread in half to encase the filling, pressing the edges together to seal. For a more secure seal, you can crimp the edges with a fork.

          Optional Egg Wash: Beat the egg in a small bowl. Brush the tops of the stuffed flatbreads with the egg wash for a lovely golden color. Sprinkle with sesame seeds or poppy seeds if desired.

            Bake: Place the stuffed flatbreads on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and crisp.

              Serve: Allow the flatbreads to cool slightly before slicing. Serve warm as an appetizer, snack, or alongside a fresh salad.
