Caramelized Onion & Gouda Stuffed Burgers

Ingredients
  

1 lb ground beef (80/20 blend for best flavor)

1 cup shredded Gouda cheese

2 large onions, thinly sliced

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

4 burger buns

Lettuce leaves (for serving)

Tomato slices (for serving)

Optional: Dijon mustard or mayonnaise

Instructions
 

Caramelize the Onions:

    In a large skillet over medium heat, add the olive oil. Once heated, add the sliced onions and sprinkle with a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are deeply golden brown and caramelized. During the last few minutes of cooking, add the balsamic vinegar and continue to cook until thickened and fragrant. Remove from heat and set aside.

      Prepare the Burger Patties:

        In a large bowl, combine the ground beef, garlic powder, salt, and black pepper. Mix gently to combine, being careful not to overwork the meat.

          Form Stuffed Patties:

            Divide the meat mixture into 8 even portions. Take one portion and flatten it into a disc. Place about 2 tablespoons of shredded Gouda cheese and a spoonful of the caramelized onions in the center. Take a second portion of meat, flatten it similarly, and place it on top to seal the cheese and onions inside. Pinch the edges to seal tightly. Repeat with the remaining meat, cheese, and onions to form 4 stuffed patties.

              Cook the Burgers:

                Preheat a grill or skillet over medium-high heat. Cook the burgers for 6-8 minutes on one side, then flip and continue cooking for an additional 5-7 minutes, or until the internal temperature reaches 160°F (medium). Ensure the cheese is melted and oozy inside.

                  Toast the Buns:

                    If desired, toast your burger buns cut side down on the grill or in a separate pan for about 1-2 minutes until golden brown.

                      Assemble the Burgers:

                        Place each stuffed burger on the bottom half of a toasted bun. Top with lettuce and tomato slices. Add your favorite condiments like Dijon mustard or mayonnaise, then place the top half of the bun on top.
