3 cups cooked rice (preferably day-old)

1 cup diced salami or pepperoni

1 cup cubed cheddar cheese

1/2 cup diced prosciutto

1/2 cup sliced olives (green and black)

1/2 cup cherry tomatoes, halved

1/4 cup chopped red onion

1/4 cup capers

3 cloves garlic, minced

3 large eggs, beaten

4 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh parsley or basil, chopped for garnish

Prepare the Rice: If you're using freshly cooked rice, spread it out on a tray and allow it to cool to help dry it out a bit; this prevents it from becoming mushy when frying.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the beaten eggs and scramble until cooked through, about 2-3 minutes. Transfer eggs to a plate and set aside.

      Sauté Aromatics: In the same skillet, add another tablespoon of olive oil. Once hot, add diced red onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.

        Add Charcuterie Ingredients: Stir in the diced salami, prosciutto, and cubed cheddar cheese, allowing the cheese to melt slightly while mixing in the pan for about 2 minutes.

          Fry the Rice: Add the cooked rice to the skillet. Drizzle with soy sauce and balsamic vinegar, stirring well to combine all the ingredients. Cook for about 5-7 minutes, stirring occasionally to ensure the rice gets evenly heated and slightly crispy.

            Incorporate Remaining Ingredients: Add the cherry tomatoes, olives, capers, and the scrambled eggs to the rice mixture. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring gently to combine the flavors.
