1 cup cooked quinoa (ensure it's cooled)

1 cup shredded sharp cheddar cheese

2 medium jalapeños, finely chopped (remove seeds for less heat)

1/2 cup green onions, finely sliced

1/2 cup cornmeal

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the cooked quinoa, shredded cheddar cheese, chopped jalapeños, and sliced green onions. Mix well to combine all the ingredients evenly.

    Add Dry Ingredients: In a separate bowl, whisk together the cornmeal, all-purpose flour, garlic powder, cumin, salt, black pepper, and smoked paprika. Gradually add this dry mixture to the quinoa blend, stirring until fully incorporated.

      Incorporate Wet Ingredients: Pour the beaten eggs into the quinoa-jalapeño mixture and mix until everything is well combined. The mixture should hold together; if it's too wet, add a little more flour or cornmeal.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This will help the fritters hold their shape during frying.

          Heat the Oil: In a large skillet, add about 1/4 inch of olive oil and heat over medium heat. The oil is ready when a small drop of batter sizzles upon contact.

            Fry the Fritters: Using a tablespoon, scoop out the quinoa mixture and carefully drop them into the hot oil. Flatten them slightly with the back of the spoon. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
