Ingredients
  

1 lb ground beef or turkey

1/2 cup breadcrumbs (panko preferred)

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 small zucchini, finely grated and excess water squeezed out

1 small carrot, finely grated

1/2 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tsp dried Italian herbs (oregano, basil, parsley, or your mix)

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh parsley, chopped (optional for garnish)

Instructions
 

Prepare the Veggies: In a small bowl, mix the grated zucchini and carrot. Squeeze out excess moisture using a clean kitchen towel or paper towel to prevent the meatballs from being soggy.

    Combine the Mixture: In a large mixing bowl, add the ground beef (or turkey), breadcrumbs, grated Parmesan, shredded mozzarella, grated veggies, chopped onion, minced garlic, egg, Italian herbs, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Shape the Meatballs: Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Make sure they are evenly sized for consistent cooking.

        Preheat the Air Fryer: Preheat your air fryer to 380°F (193°C) for about 3-5 minutes.

          Air Fry: Place the meatballs in a single layer in the air fryer basket, making sure they do not touch. You may need to cook them in batches. Air fry for 10-12 minutes or until they are golden brown and cooked through (internal temperature of 165°F/74°C).

            Serve: Once cooked, remove them from the air fryer and let them cool slightly. Garnish with fresh parsley before serving.
