Ingredients

2 cups cooked white or brown rice

2 cups fresh broccoli florets (steamed)

1 ½ cups sharp cheddar cheese (shredded)

1 cup cream of mushroom soup (or homemade)

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese (for topping)

½ cup breadcrumbs (optional, for a crispy topping)

1 tablespoon olive oil (if using breadcrumbs)

Fresh herbs (like parsley or chives, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Rice: If not already cooked, prepare the rice according to package instructions. Fluff and set aside.

Steam the Broccoli: In a steaming basket over boiling water, steam the broccoli florets until they are bright green and tender, about 5 minutes. Remove from heat.

Mix the Base: In a large mixing bowl, combine the cooked rice, steamed broccoli, 1 cup of shredded cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and black pepper. Stir everything together until well combined.

Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

Add Toppings: Sprinkle the remaining ½ cup of cheddar cheese and the grated Parmesan on top. If you like a crunchy topping, mix the breadcrumbs with olive oil and sprinkle over the cheese layer.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is melted and bubbly. If using breadcrumbs, bake until they are golden brown and crispy.

Garnish and Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh herbs if desired, then serve warm.
