Cheesy Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup almond flour (or regular flour)

2 large eggs

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper, to taste

2 tablespoons chopped fresh parsley (for garnish)

Optional: Hot sauce for serving

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare Cauliflower: In a large pot of boiling salted water, blanch the cauliflower florets for about 3-4 minutes until slightly tender but still crisp. Drain and let cool. Pat them dry with a paper towel to remove excess moisture.

      Make the Mixture: In a mixing bowl, combine the cheddar cheese, Parmesan cheese, almond flour, eggs, garlic powder, onion powder, paprika, salt, and black pepper. Stir until all ingredients are well-combined into a thick mixture.

        Combine Cauliflower and Cheese Mixture: Add the blanched cauliflower florets to the cheese mixture. Gently fold the florets in until they are evenly coated.

          Form Bites: Using your hands, scoop out a tablespoon of the mixture and form small bite-sized balls or patties. Place them on the prepared baking sheet, leaving some space between each bite.

            Bake the Bites: Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside, flipping them halfway through for even cooking.

              Serve: Remove the cheesy cauliflower bites from the oven, let them cool for a couple of minutes, and then garnish with fresh chopped parsley. Serve warm with hot sauce or your favorite dipping sauce on the side.
