Ingredients

1 (8 oz) package cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup shredded pepper jack cheese

1 can (4 oz) diced green chilies, drained

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon ground cumin

Salt and pepper to taste

4 large flour tortillas (10-inch)

1/2 cup fresh cilantro, finely chopped (optional)

Cooking spray or melted butter (for brushing)

Additional toppings: salsa, sour cream for serving

Instructions

Prepare the Filling: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded pepper jack cheese, diced green chilies, garlic powder, onion powder, ground cumin, and season with salt and pepper. Mix until well combined and smooth.

Spread the Mixture: Lay a tortilla on a clean, flat surface. Spread a generous layer of the cheesy green chili mixture evenly over the tortilla, leaving about 1/2 inch of border around the edges.

Sprinkle Cilantro (Optional): If using, sprinkle the finely chopped cilantro over the cheese mixture for an extra burst of flavor.

Roll Up the Tortilla: Starting from one side, tightly roll the tortilla away from you into a log shape. Make sure to keep the roll as tight as possible to prevent the filling from spilling out.

Chill the Rolls: Wrap the rolled tortillas in plastic wrap and place in the refrigerator for at least 30 minutes. This helps them firm up and makes slicing easier.

Preheat and Prep Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Slice the Rolls: Remove the rolled tortillas from the refrigerator and unwrap. Using a sharp knife, slice each roll into 1-inch pinwheels.

Arrange on Baking Sheet: Place the pinwheels cut side up on the prepared baking sheet. Brush the tops lightly with cooking spray or melted butter to help them crisp up in the oven.

Bake the Pinwheels: Bake in the preheated oven for about 10-12 minutes or until they are golden brown and the cheese is melted and bubbly.

Serve: Remove from the oven and let cool slightly. Serve warm with salsa or sour cream on the side for dipping. Enjoy your cheesy green chili pinwheel bites!
