1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup uncooked elbow macaroni

2 cups beef broth

1 can (10.5 oz) cream of mushroom soup

1 can (14.5 oz) diced tomatoes, drained

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon. Add in the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

      Combine Ingredients: Once the beef is cooked, stir in the uncooked macaroni, beef broth, cream of mushroom soup, drained diced tomatoes, Italian seasoning, paprika, salt, and pepper. Mix everything thoroughly to ensure the macaroni is submerged in the liquid.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly, making sure the macaroni is evenly distributed.

          Add Cheese: Sprinkle 1 cup of shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Before serving, sprinkle with the remaining 1 cup of shredded cheddar cheese and some fresh parsley if desired.
