1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups chicken broth

2 cups milk

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

3 green onions, sliced (for garnish)

Optional: 1 cup frozen mixed vegetables (peas, carrots, corn)

Instructions
 

Cook the Ground Beef: In a large pot or Dutch oven, over medium heat, cook the ground beef until browned. Drain excess grease, leaving about a tablespoon in the pot for flavor.

    Sauté Vegetables: Add the diced onion and minced garlic to the pot, stirring for about 3-4 minutes until softened and fragrant.

      Add Potatoes and Broth: Incorporate the diced potatoes into the pot, followed by the chicken broth. If you’re using frozen mixed vegetables, add them at this stage as well. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to a simmer and cover the pot. Allow it to cook for about 15-20 minutes, or until the potatoes are tender.

          Mix in Dairy: Stir in the milk, cream cheese, shredded cheddar cheese, garlic powder, paprika, and season with salt and pepper. Keep stirring until the cheese melts and the soup is creamy and well combined.

            Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed. If it’s too thick, you can add more chicken broth or milk to reach your desired consistency.
